Hi and welcome to Griffin Jerky.
For the last year, I've been on a mission to make the best Jerky you can buy from the best produce you can source available in the best bars & outlets in Australia, and it's now finally becoming a reality. I've spent a lot of time looking for the best meat, herbs & spices and techniques to make a truely unique, ethically minded Jerky that will re-invent the way you think about Jerky.
Jerky gets a pretty bad rap, and deservedly so with all of the mass produced rubbish you'd likely find in most outlets, but what I set out to do is to put Jerky in easy reach of a drink that you can taste the actual quality of the jerky, not a slimy preservative filled mess. I was inspired to do this when I was driving across America with my girlfriend and we stopped at a farm in Colorado that sold Buffallo Jerky they made themselves. It was fresh, delicious and unlike anything i'd had before.
So I started thinking about how I could make something that good, and got to testing out different cuts, flavours and styles till I found what I was looking for.
Then it was time to think about where i'd like to buy it. I've never understood why every bar doesn't have big ol' Jerky Jars in easy reach, as it's the perfect environment it. So I started speaking to my friends who had bars, and they gave me the push to make this a legit thing so they can sell it.
Then it came to sourcing the best meat. I tried many different suppliers, but kept going back to The Freerange Butcher. Ben Clinch sources his meat from his own and surround farms at Barraba in Northern NSW. It's ethically sound, 28 day dry aged, pasture fed beef, and it's the perfect supply for the best quality jerky.
